Collection: Mezcal
Mezcal is a distilled alcoholic beverage originally from Mexico, which is obtained from the fermentation and distillation of agave, a plant that grows mainly in the arid and semi-desert regions of the country. Unlike tequila, which can only be made from a specific species of agave (Agave tequilana), mezcal can be made from several species of agave, giving it a wide variety of flavors and aromas.
The process of making mezcal is very artisanal and is carried out in a traditional way in many parts of Mexico. After the agave is harvested, it is baked in earthen ovens for several days, allowing it to soften and turn into a sweet dough that can be fermented. It is then ground and mixed with water, and left to ferment for several days before being distilled in copper or stainless steel stills.
Mezcal can be consumed alone or as an ingredient in cocktails, and can be found in a wide range of prices and qualities, from artisanal mezcals produced in small quantities to commercial brands produced in large volumes. Mezcal is considered a cultural and emblematic drink of Mexico, and has gained popularity around the world in recent years due to its unique flavor and the craftsmanship involved in its production.
